To create the golden color, the grapes are briefly dipped into a food-grade alkaline solution, which is typically a mixture of water and potassium carbonate. The alkaline solution breaks down the natural tartaric acid on the grape's skin and turns it into a golden hue. The drying process can take several days to reduce the moisture content and achieve the desired raisin texture.
